It is one of the most versatile and useful herbs in the kitchen, in the home, and medicinally. It is associated with remembrance and, for hundreds of years, it was used to improve the memory. From the Latin ros marinus meaning “dew of the sea” a reference to its native habitat, the Mediterranean coasts. Dark grey-green needle-like leaves impart a robust resin-like flavour that complements almost all continental dishes wonderfully. Use fresh or dried. Whole wheat thin-crust pizza topped with only rosemary, goat cheese, garlic, olive oil and salt tastes wonderful! Rosemary clippings are said to repel slugs. Blossoms range from deep blue to pale pink or white. Leaves conserve water. This ornamental evergreen herb forms a small shrub that adapts well to pot culture. Sow plenty as germination rates are naturally relatively low for this herb.

Notes Stratify seed; place in moist soil and freeze or refrigerate or alternate between the fridge and freezer. Nearly any herb requiring stratification can be sown in the winter; Needs light to germinate; Sow heavily as Rosemary has low germination genetically (30% is average). Cannot withstand very cold temperatures, may be overwintered indoors if kept cool and moist. Rosemary is prone to a die-back virus. Immediately cut the infected branch off to the main stem, and burn; do not compost the branch. Act quickly, or the whole bush will die.
